MIRABELLE PLUM SALAD
Passionate since forever about everything that can be eaten and everything that can be drunk, Romane Lesellier founded the gourmet communication agency Balthazar in 2016 as well as the podcast Premier Service, dedicated to behind the scenes of restaurant openings. She is always on the lookout for great addresses in the region, but also throughout France and abroad during her travels. Normandy is full of treasures and inspiring places. Among them, Le Court-Bouillon in Caen: subtle cuisine with world influences, surprising flavor pairings, and unapologetic indulgence. A table for bon vivants!
This month, Romane offers a seasonal starter for two people.
INGREDIENTS
• 200 g pitted mirabelle plums
• 1 handful of crushed almonds
• ½ red chili pepper, finely sliced
• 1 pinch of Espelette pepper
• ½ lime( juice)
• Olive oil
• Salt, pepper
STEPS
• Cut the mirabelle plums in half and place them in a salad bowl.
• Add the almonds, chili pepper, and lime juice.
• Season with olive oil, salt, pepper, and Espelette pepper.
• Mix gently and serve well chilled.
