Chai Sticky Date Muffins with Caramel Sauce

Because nothing warms the soul like a batch of caramel-date goodness .

Chai Sticky Date Muffins

Gluten , dairy & refined sugar free Makes : 12 Muffins Time : 20 Minutes Difficulty : Medium

INGREDIENTS

300g ripe banana 7 Medjool dates , pitted 1 1 / 2 cups almond meal ( 225g ) 2 teaspoons chai spice or the contents of 2 chai tea bags 1 / 4 cup tapioca flour ( 30g ) 1 teaspoon baking soda 1 / 4 teaspoon sea salt 3 extra-large free range eggs 1 teaspoon vanilla extract 2 tablespoons ghee , melted ( see note )

DIRECTIONS

1 . Preheat oven to 175 ° C . Grease or line a 12-hole muffin tin , or tin of choice , and set aside .
2 . In your Vitamix blender add the dates and banana . Process on Variable Speed 1 increasing speed slowly to 5 , blending for 30 seconds or until smooth and creamy .
3 . Add almond meal , chai spice , tapioca flour , baking soda , and sea salt , followed by the eggs , vanilla and melted ghee to the jug . Blend slowly from Variable Speed 1 to Variable Speed 10 and back to speed 1 again , until just combined .
4 . Using a spatula , pour batter into each muffin well , filling 3 / 4 full .
5 . Bake for 18 minutes or until muffins spring back to the touch and are golden on top .

Caramel Date Sauce

Dairy & refined sugar free Makes : 1 Cup Time : 10 Minutes Difficulty : Easy

INGREDIENTS

10 Medjool dates , pitted and soaked 1 / 2 cup coconut yoghurt ( or plain yoghurt of choice ) 1 tablespoon maple syrup 1 teaspoon vanilla Extract Pinch of Sea Salt to serve

DIRECTIONS

1 . Pitt and place dates in a heatproof bowl . Cover with boiling water and soak for five minutes . Drain and cool .
2 . Place cooled dates , yoghurt , maple syrup and vanilla in your Vitamix blender . Set to Variable Speed 1 and begin blending . Increase to Variable Speed 5 , blending for 30 seconds until smooth and creamy .
3 . Serve immediately or store sauce in a sealed jar in the refrigerator for up to one week .
To Serve : Top warmed muffins with a few tablespoons of caramel sauce , sprinkled with a pinch of sea salt , and enjoy !
This recipe has been written for the G-Series machines with Variable Speed Control and Standard 2.0-litre container . If you are using a different Vitamix machine or container size , you may need to make adjustments to the Variable Speed , processing time , and / or ingredient quantities .
