Chef Callum Hann reveals his cooking tips for winter warmers
On the lookout for some winter culinary inspiration ? Former MasterChef contestant and owner of Sprout Cooking School and Health Studio , Callum Hann , shares his top 3 tips for creating tasty , wholesome meals this winter .

TIP 1 : YOU CAN BBQ IN WINTER

Barbecues are a quintessential part of an Australian summer , but strangely tend to be stowed away in the cooler months .
“ There is something very cosy about lighting up a charcoal barbecue on the veranda outside my house in the middle of winter ,” Callum says .
“ I love to have a few friends gather round the fire with a glass of wine and we cook up everything from prawns and steak to leeks and chunks of sweet potato .”

TIP 2 : USE YOUR SLOW COOKER FOR TOUGH CUTS

What ’ s better than a big bowl of comfort food that ’ s been simmering steadily on a cold winter ’ s night ?
“ Winter is the perfect time for slow cooking and it leaves the whole house full of mouth-watering aromas ,” Callum says . “ I use my slow cooker for tougher cuts of meat like chuck or brisket and for pulses and root veggies that can be used to make delicious curries and roasts .”

TIP 3 : COMFORT FOOD DOESN ’ T HAVE TO BE HEAVY

“ People often think summer food is light and winter food is heavy but it ’ s easy to create healthy , satisfying meals at this time of year ,” Callum says .
To keep your dishes healthy in winter , don ’ t be afraid to add lots of spices and fresh herbs . “ Instead of a sprinkling of parsley add a whole bunch or stir in a tablespoon of paprika instead of a teaspoon ,” says Callum . “ Slow cooking in particular can mellow out flavour , so it ’ s hard to overpower the dish . Just don ’ t add too much chili or wasabi !”
