Ingredients
1 Servings
• 1 c cooked white rice
• 1 oz carrots, sliced thin
• 1 oz celery sliced thin
•. 25 oz fresh ginger, minced
• 1 ea garlic cloves, minced
• 3 oz chicken breast( raw weight) skinless boneless, cooked and shredded or diced
• 1 oz green onion chopped
• 1 T cilantro raw
• 3 T water
• 1 t low sodium soy sauce
The rice must be cooked and cooled completely, preferably overnight in the fridge. This will allow it to dry out sufficiently to give it the proper texture for fried rice. In a non-stick pan add the water and the ginger and garlic.“ sauté” them for a minute and add the carrots and celery. Cook for a minute then add the cooked chicken and the cooked rice( that has been broken up well). Toss to heat everything through. Add the scallions, cilantro and soy sauce.
