Ingredients
1 Servings
• 1 c cooked white rice
• 1 oz carrots , sliced thin
• 1 oz celery sliced thin
• . 25 oz fresh ginger , minced
• 1 ea garlic cloves , minced
• 3 oz chicken breast ( raw weight ) skinless boneless , cooked and shredded or diced
• 1 oz green onion chopped
• 1 T cilantro raw
• 3 T water
• 1 t low sodium soy sauce
The rice must be cooked and cooled completely , preferably overnight in the fridge . This will allow it to dry out sufficiently to give it the proper texture for fried rice . In a non-stick pan add the water and the ginger and garlic . “ sauté ” them for a minute and add the carrots and celery . Cook for a minute then add the cooked chicken and the cooked rice ( that has been broken up well ). Toss to heat everything through . Add the scallions , cilantro and soy sauce .
