• 1 lb . dried navy beans , rinsed & drained .
• 6 c . chicken broth or vegetable broth .
• 1 onion , chopped .
• 1 stalk celery , chopped .
• 2 cloves garlic , pressed .
• 1 / 2 bay leaf .
• 1 can diced tomatoes , with juice .
• Salt & Pepper to taste .

• 1 lb chicken breast
• 5 tbs lemon juice
• 3 tbs low sodium soy sauce
• 1 tsp oregano
• 1 tbs basil
• 5 whole wheat pitas
• 1 chopped tomato ( medium )
Preparation Instructions
Best to soak the beans overnight ahead of time . In a crock pot , combine the 1st 6 ingredients . Cook on high for 1 hour , turn it down to low & cook for 8-10 hours . When beans are tender , add tomatoes and salt / pepper to taste . Serving suggestions : with a big green salad and whole grain rolls . Can substitute low sodium broth .
