CLUB DEPARTMENT UPDATES

TRAVIS BRAZIL , DIRECTOR OF FOOD AND BEVERAGE
After my first 6 months at CH , I can truly say that we are in for a good Winter . The guest feedback about Thanksgiving lets me know that we are on the right track to continue and improve not only the overall experience , but also the confidence of our valued residents .
The success of our Tuesday night special buffets tells me that residents really want to come and enjoy their clubhouse dining , so we just have to continue to find ways to allow them to do just that . Look for more themed nights and specials to provide an opportunity for more and more residents and guests to enjoy their favorites at the Heritage Room .
Sunday brunch is my favorite meal of the week , and while we are happy that the new brunch menu has brought many guests back for Sundays , we are not done yet ! This winter we are expanding brunch even more , with the addition of a Bloody Mary and Mimosa bar , as well as continued weekly brunch specials . We have definitely noticed that the “ attended ” stations are the most popular so look for more of those this winter !
The wine club has been a real benchmark of guest satisfaction , and we look forward to expanding both the membership and the offerings . In the next year we will build upon that popular program with more expansive drink programs throughout Colonial Heritage . We are thrilled to have built a whiskey collection that residents can be proud of , and look to take advantage of our unique selections by hosting whiskey tastings , dinners , and cocktail classes for a more “ winter themed “ experience .
The Winter season will also see lots of fun new drink specials , such as “ the warm Apple Pie , and a signature hot toddy . So be on the lookout for those weekly winter drams ! December ’ s “ calendar of menus ” was a great improvement in our ability to communicate with CH residents , so as we continue to improve our communication process look to see more “ monthly menus ” to go along with the weekly email blasts . I want our residents to be able to plan their whole month at our dining room !
We are very much aware that the residents of Colonial Heritage have entrusted us with providing true hospitality , and this winter we will continue to work hard to earn that trust . Fall of 2023 allowed us to make some real progress on that front , and also some opportunities to grow in a positive direction . With the addition of a new restaurant manager and some new “ veteran ” servers , we are continuing our efforts to make the service at CH something that residents can be proud of having .
ZEKE MARSHALL , GOLF COURSE SUPERINTENDENT
With winter right around the corner frost will now be a concern on the golf course . This will not be much of an issue on warm season grasses such as Bermuda because it will be dormant but it will be a bigger issue for those of us with cool season grasses such as Bentgrass and Fescue . Frost is the dew on the plant in the morning that has frozen and makes the leaf brittle . Walking or cart traffic on frost covered turf causes the plant to break and cell walls to rupture , thereby losing it ability to function normally . Once this happens it cannot be reversed . The damage will not be immediate but the grass will turn purple and eventually brown in about 48 hours . This will cause thinning and weakening of the turf which in turn makes the turf more susceptible to weeds and disease . So for those of you with Fescue lawns be careful working on your yards early on these cold mornings .
