My initial experience at Taste of the Caribbean in 2010 in Puerto Rico was mostly apprehensive because I did not know what to expect. Armed with experience and knowledge of what is expected of TOC competitors, I returned in 2013 with my eyes fixed on winning a gold medal in the Chef of the Year competition.
When it was announced that not only did I win that gold medal but beat the other 9 chefs to win this coveted prize, can be described as the single most intense experience of my life! This was not only a honour for me but it was one for my team and for Jamaica.
The investment of our sponsors and the Culinary Federation of Jamaica especially that of Chef Stewart and Chef McIntosh was a great one and I am very proud of to be apart of Team Jamaica.
Any advice for persons wanting to become chefs and enter competitions
your dishes & recipes
My advice is to research Jamaican and Caribbean cuisines extensively and join groups such as the CFJ in order to network with chefs, to compete in our local Taste of Jamaica competitions and to keep abreast of the latest news in the culinary industry.
