Pastry:
Grate Rind of 1 lemon
Mix together flour, sugar and rind,
rub in butter (a food processor
can be used for this) until mixture
resembles breadcrumbs.
Tip mixture into a large bowl and make a well in centre.
Place beaten egg in well and blend together, adding milk as needed if dry.
Divide dough into thirds, wrap remaining
dough and place in refrigerator. Roll out
2-3mm thick between baking paper
sheets and cut into rounds using a 6.5cm
round cutter. Repeat with remaining
dough.
Place into greased patty pan tins.
Filling:
Mince almonds (food processor can be
used for this), mix all filling ingredients
together with electric mixer until
combined well.
