Spinach & Asparagus Soup

chopped
spring
onions

cups
spinach

thick
asparagus
spears
sliced
in
half
or
12
thin
asparagus
spears
½
tsp.
olive
oil
2
cups
light
coconut
milk
Spices
(choose
your
favorite
spices
or
your
favorite
curry
paste)

For
example:
cumin,
cinnamon,
Mexican
chili
powder,
ground
paprika,
dried
chili,
garlic,
ground
cilantro,
lime,
cardamom,
salt
&
pepper
InstrucBons
1.
In
a
saucepan
on
medium
heat,
fry
the
spring
onions
in
oil
unBl
lightly
browned.
2.
Add
spices,
asparagus
and
spinach
and
sBr
unBl
spices
are
heated
and
mixed
through
the
asparagus
and
spinach.
3.
Add
the
coconut
milk
and
simmer
for
10-‐15
minutes.
Serve.
