! Sweet Potato & Chicken Salad Serves  2 ! Here’s  what  you  need:   1  barbequed  chicken  breast,  shredded     2  cups  diced  sweet  potato,  peeled  &  diced   1  bunch  fresh  cilantro,  roughly  chopped   ⅔  cup  unsalted  cashews   1  garlic  clove,  minced   1  tbsp.  olive  oil   2  tbsp.  fresh  lemon  juice   ¼  tsp.  chili  powder   
 InstrucBons   1.  Boil  water  in  a  small  covered  saucepan.  Adding  sweet  potato  for  3-­‐4  minutes  or  unBl   tender.  Remove  from  heat  and  drain.     2.  Place  sweet  potato  into  a  salad  bowl  combined  chicken,  cashews  and  cilantro.   3.  To  make  dressing,  mix  garlic,  oil,  lemon  juice  and  chili  powder  well.   4.  Drizzle  dressing  over  salad  when  ready  to  serve.     ! ! !
