Step 4
Start with the outer petals. Pipe the first ring of petals flat against the cupcake. Hold your piping tip about 1.5 cm in from the edge, with the wide end facing in and the narrow end facing out.
Squeeze gently and move the tip outward, curve up and over, then back in toward the centre as you release pressure. Overlap each petal slightly, tucking the next one just under the previous.
Rotate the cupcake as you go. Aim for 15 – 18 petals in this outer ring.
Top tip: you can use a small circle cutter to mark out a guide line and keep your petals placed evenly.
Step 5 Second layer: add height. Use the same motion, but angle your tip to 45 ° this time. Pipe petals slightly more upright, rotating the cupcake a little as you go. This gives the flower height and structure. Aim for 8 – 12 petals in this ring.
