Spinach Pie Salad Vinaigrette

Ingredients ( Serves 4 )
• 1 cup good quality red wine vinegar
• 1 cup extra virgin olive oil
• 2 tbsp . fresh basil
• 2 tbsp . fresh oregano
• 1 tsp minced fresh garlic
• 1 the tbsp . sea salt
• 1 tsp black pepper
Directions
Add all ingredients into a blender except the olive oil .
Blend until fresh herbs are pureed and slowly add the olive oil until emulsified .
This recipe can be made up to 3 days in advance and gets better after the first day .
