Healthy indulgences: can such things exist?

Mango Crumble

Prep time: 30-40 mins

Cooking time: 20-30 mins

Ingredients:

4 ripe sweet mangoes (medium size)

4 cups whole meal flour (plain or self-raising)

2 cups brown caster sugar

4 table spoons mango passionfruit coulis

Butter or margarine

Vanilla, honey, spices to taste

Method:

Preheat oven to 175o

Peel and thinly chop mangoes. Place them in a bowl with the honey, coulis, vanilla and spices. Cover bowl and leave to soak and marinate.

Add flour, sugar, spices and vanilla in a separate bowl. Dice the butter and stir. Once all the butter is covered, begin rubbing the mixture between your fingers until you have a nice moist and crumbly mixture.

Grease a baking pan with putter and begin layering the sliced mango. Pour the excess juice over the slices.

Top the mangoes with the crumble. Spread mixture evenly.

Place the crumble in the oven and wait until golden brown, and lightly crunchy. Some of the juice should have also oozed to the top and caramelised!

For something extra, add oats or shredded almonds to the crumble topping before baking.
