Just when you think you ’ ve heard it all when it comes to food variety , along comes somebody with an unusual and tasty-sounding idea . “ We ’ ve got a Breakfast Burger ,” Kyle said . The Breakfast Burger is a unique concept smashburger , topped with traditional American breakfast fare , including a fried egg , bacon and a hashbrown , complete with fresh cheddar .
The Southwest Smashburger comes with everpopular pepperjack cheese , avocado , red onion , fresh tomato and crisp lettuce .
Another unique combination of flavors comes with the East Coast Smashburger , which includes the smashburger patty topped with a delicious crab cake , fresh lettuce , tomato , and Eagle ’ s tasty house sauce . Flavors of the northeast U . S . can be enjoyed in smashburger style with the Northeast Smashburger , which is topped with amazing Maple Bacon Jam , white American cheese and grilled onions .
And , of course , going right along with the Eagle Mobile Kitchen ’ s patriotic red , white and blue color-themed truck design , is the good ol ’ fashioned American Smashburger , topped with white American cheese , bacon , grilled onion , lettuce and tomato .
All of the mobile kitchen ’ s sandwiches come with fresh fries and a can of soda of your choice , and this year they plan to add onion rings to the list of side options .

Bigfoot BBQ of KY has been spotted around town serving up delicious hand-pulled BBQ and homemade sides .
For most of Chris Waters ’ adult life , he ’ s been a barbecue man .
Whether in college with his buddies , sitting around after class , barbecuing , partly because it tasted great , partly because it was relatively affordable , or barbecuing for the family and the neighbors after college when he got married and had two girls with his wife , Robin , Chris has developed his grill skill just as a natural part of who he is .
And with time and positive feedback from family and friends , it was no wonder that he would get around eventually to turning it into a business , and so was born Bigfoot BBQ of KY .
And , if it hasn ’ t already crossed your mind : no , there is no actual Sasquatch in their product ! But , though Chris does like a good dad joke , and claims he has a bunch , he takes his barbecue seriously .
All of Bigfoot BBQ ’ s spices and blends are original creations Chris has perfected over the years , and Chris and Robin ’ s personal attention to detail doesn ’ t stop there .
“ All of the meat is hand-pulled and hand-cut ,” said Chris . “ There is no fat , there is no gristle , there is nothing in any product that you buy from us other than the advertised product .”
Chris said methodically cutting away all fat and gristle from his poultry , beef brisket , and pork to the point that it is “ extremely clean ” gets him compliments left and right , but does cut into his profit margins a bit .
But he said it ’ s worth it for the customer satisfaction and return business .
“ The flavor profile is better and you actually get what you are paying for ,” he pointed out .
Other Bigfoot BBQ of KY products that keep ’ em coming back for more include deep-fried smoked baloney , candy bacon , and candied apples .
Their sides include crowd-favorites like baked beans , homestyle potato salad , macaroni salad , cinnamon brown sugar candied apples and Italian seasoned green beans .
The biggest seller on the menu is Robin ’ s brainchild : Totchos . “ Our version of nachos , but instead of chips , we use tater tots ,” said Chris .
This item includes fresh-made tater tots on the bottom , with a variety of topping choices . “ We can normally customize those ,” he added . The Totchos can come with any of Bigfoot BBQ ’ s meat , whether chicken , brisket or pork .
Examples include the Mac Attack , which includes candied bacon and mac and cheese as toppings , and also a Totchos version which includes smoked deep-fried baloney and mac and cheese smothered on the tots .
Interest in Bigfoot BBQ ’ s flavorful food choices has grown pretty well over the last couple of years , and Chris and Robin decided to open , in addition to their food truck , a more stationary outlet in the Somerset Mall near the center of the mall .
This venue is supervised by Robin and Chris ’ s adult daughters , Teagan and Kinsley .
The food truck has been spotted at various public and private events and locations since it was first sighted in Pulaski County , including at the Moonlight Festival , Nelson Valley Motocross , and at Dreaming Creek
