First start out by putting a pot of boiling water on the stove, salt the water and add a small drizzle of olive oil to the water (to prevent sticking). While the water is coming to a boil, place the diced onion in a skillet with 1 tablespoon of butter and salt and pepper. About halfway through the cooking process of the onions throw in 2-3 cloves of minced garlic. Do not caramalize the onions they should be soft with a slight golden shade. Once the onions are complete place them in a bowl with the Bacon (optional) and set aside. Boil the water accordingly and start your cheese sauce while the pasta is boiling. Follow the recipe (link on the left for the cheese sauce recipe) Make sure when you fry the bacon you get it crispy. Pat bacon with a paper towel and drain grease completely. Dice up the bacon into very small chunks.... Once the pasta is done strain completely and mix with the cheese sauce. Now you should slowly stir in the onions and bacon. Reserve a small amount of bacon for the topping. Spray the baking dish with olive oil spray or any non stick cooking spray will do. Pour the mixture into the baking dish. Sprinkle cheese and reserved bacon on top... Bacon is always an added bonus and it sure will spice up the typical holiday dinners.
