Thanksgiving Stuffing
You can use any bread of your choice, French bread, white bread, sourdough, biscuits, bakery bread or whole wheat bread.
The first step is to dry the bread after you have cut it into 1" cubes. You can do this in 2 different ways. One way is to spread the bread onto a baking sheet and let sit on your counter for 2 days or put it into the oven on 250 degrees for 40 minutes.
In a skillet, cook sausage until browned. Remove from heat and drain
off the fat.
Clean the skillet and melt the butter and add onion. Saute until soft. Pour this mixture into the bowl with the bread. Add herbs, salt and pepper. Stir together.
In a seperate bowl whisk the eggs and add the broth to the bowl with the bread and the celery and sausage. Pour the egg mixture over the bread and mix well.
Pour the mixture into a greased baking dish. Cover with foil and bake for 40 minutes at 350 degrees. Remove the cover and bake another 10 minutes. Serve.

3/4 cup butter
2 cups onion
2 cups chopped celery
1/4 cup chopped parsely
1 Tablespon each Thyme, Sage and Rosemary
1 Teaspon of Kosher salt
1 Teaspoon pepper
2 Eggs
2 Cups Chicken broth
16 oz Sausage
