Hyogo NCC College at Institut Paul Bocuse

On Monday January 30 th and Tuesday January 31 st 2017, Institut Paul Bocuse( France) was pleased to welcome Mister Yuzuru Fukuzawa and 31 students from Hyogo NCC College( Japan), member of the Institut Paul Bocuse Worldwide Alliance since 2007. Chef Paganini, Chef Oger, and Chef Fremont taught them about French Gastronomy during 2 evenings dedicated to the discovery of French Haute Cuisine. The group was accompanied by Taro Iwakoshi, Alliance Alumni 2011. At the program: new techniques, exchange of know-how, sharing of knowledge, and transmission of the Worldwide Alliance spirit.

On January 24 th and January 25 th 2017, 24 international chefs competed in the final chapter of the Bocuse d ' Or competition held in Lyon during SIRHA 2017. Over the past 30 years, this World Hospitality and Food Service Event has become the meeting point for all trades in the hotel and catering sector. For this edition, 3,045 international exhibitors and brands, 11 exhibition zones covering food products, equipment and services, 208 000 visitors, 21 contests... and obviously the finals of the famous Bocuse d’ Or competition.
During two days, the most promising chefs in the world gave their best in the hope of winning the trophy which was celebrating its 30 th year anniversary. Among contestants, Giovanna Grossi( Alliance Alumni 2012) represented Brazil. Giovanna qualified during continental selections in autumn 2016, and became the first woman to win the Bocuse d’ Or Latin America. Proud to represent her nation, she trained in many restaurants in France, and especially at Institut Paul Bocuse, to be prepared for the D-Day. This year, the spotlight was on vegetables. The jury asked the candidates to create a dish composed exclusively of fruit, vegetables, cereals, seeds or legumes. Here a little preview of Giovanna’ s realization which has allowed her to finish fifteenth in the final classification.
