3. Gastronomy

Ready for a festival of flavors? Well, the state of Hidalgo offers that and much more.

When we think about its gastronomy, delicious typical dishes that taste like glory inevitably come to our mind and, in addition to traditional pastries, have given the state a unique seal that attracts thousands of visitors. Tlacoyos, molotes, enchiladas, or how about some tulancingueƱas ?, which is a kind of ham and yellow cheese quesadilla, or perhaps, a turkey ?, because this is a delicious enchilada cake, you will love it. Well, all this is part of the typical menu.

And speaking of other dishes, lovers of meat can enjoy a barbecue of ram at the foot of the oven nailed to the ground, in the purest prehispanic style, or a piece of delicious jerky or jerky in Tulancingo, Actopan and Pachuca.

But if they really want to go further, they should try, in season, the fried escamoles in butter or egg capers.

Obviously we must not forget the famous pastes, those small empanadas whose filling can be sweet or salty. Originally brought by the English to the mining towns of Real del Monte and Pachuca, new and delicious ingredients have been added to the original recipe.

Special mention deserves the variety of sweet or salty tamales characteristic of this region. The zacahuil is made with corn dough, stuffed with pork, chicken or turkey, wrapped with banana leaf and cooked in the heat of a wood oven. In the variety of sweet tamales, xohol is a mass of corn sweetened with brown sugar.

4. Ruta del Pulque

The state of Hidalgo has pulque haciendas that date back to the seventeenth century and that over the centuries knew how to take advantage of its wide plains to produce food. However, realizing the little investment that the magueyes required, they changed their direction, creating one of the strongest industries that existed in Mexico.
