What and Where to Eat Master Chef  USA 2012 winner Recipe Caramelised chicken wings Ingredients Picture credits:Google Procedure 1. 1/2 cup fish sauce 2. 1/2 cup sugar 3. 2 Tb ketchup 4. 6 cloves garlic 5. Zest of 1 lime 6. 2 Tb canola oil 7. 1 cup cornstarch 8. 2 red chili peppers 9. 1 1/2 Tb cilantro 10. 1/2 Tb mint In a bowl , combine fish sauce,sugar,ketchup ,garlic and lime zest. Divide the wings into 2 resealable plastic bags . Pour half the marinade in each and shake well to coat. Refrigerate for three hours. In a skillet, heat the oil over medium heat. Add cloves of minced garlic and cook for two minutes until soft and fragrant.Fill a pot with three inches of oil and set two wire racks over paper bags. Place the cornstarch in a shallow rimmed bowl .Shake excess marinade off.Fry the wings for 10 minutes until golden and cooked through.Pour the remaining marinade in a saucepan and cook it until it forms a syrup consistency. Add chile peppers,cilantro and toss with the chicken wings to coat. 9
