You may know ( but a reminder is always good !) that colorful vegetables are rich in antioxidants . Antioxidants help protect mitochondria ( and cells ) from free radicals and oxidative stress . Colorful vegetables are rich in antioxidant vitamins and minerals ( such as vitamin C , E , beta carotene , selenium ), and are also rich in antioxidant phytochemicals ( bioactive compounds produced by plants ). Phytochemicals can be powerful protectors .
Great choices for foods rich in phytochemicals include broccoli ( a perennial on every good list ), citrus , carrots , spinach , berries , cabbage , beets , squash , and potatoes ( not a green light for French fries by the way ).
