Banana bread
Another cake that is very autumnal and even more delicious is banana or monkey bread, the
great thing about their recipe is because it's so flexible. The dish was originally created to
get rid of overly- ripe bananas and any leftover seeds and nuts, although you can include
anything in this recipe from chocolate to seeds i'm going to show you my favorite version!
Here's what you'll
need:
140g of butter
140g of sugar
140g of flour
2 large eggs
2 over ripe- mashed bananas
½ tsp of vanilla
1tsp of baking powder
Additionals ( I used pecans, sunflower seeds and chocolate chips)
Glaze
50g Icing sugar
Milk (at least 30ml of a cup)
Water
First preheat the oven to 180 degrees, then grease a tin with butter or oil, combine butter
and sugar and whisk for 2-4 minutes or until well combined, add the eggs, baking powder
and flour. Once well incorporated add the chocolate, nuts and seeds. Once all mixed add 2
mashed bananas, (make sure these are brown and mashed very well), transfer this to the tin
and bake for 20 minutes or until they are cooked through. Enjoy!
You can make a quick glaze by combining 50g of icing sugar too 25g of milk and a splash of
water, keep adding water until you get a sticky, pourable consistency and top the bread.
