Minced BeeF
& Pasta Stir-fry

Ingredients
• 1lb minced beef
• 1lb elbow or shells pasta
• 1 carrot diced
• 1 onion diced
• 1 sweet pepper diced
• 3-4 cloves garlic minced
• 3 leaves chadon beni minced
• 2 pimentos minced
• Salt and pepper to taste
• Fried rice/chowmein/all purpose seasoning
(optional)
Method
1. Boil the pasta according to package
instructions. (Be sure to stop at al dente as
we will be stir-frying the pasta a bit more
later on) Drain and set aside.
2. Add 1 tbsp oil and the minced beef to a
pre-heated pot. Cook minced beef for a few
minutes without turning to achieve a bit of
caramelization, then stir and finish cooking.
Add salt and powdered seasonings at this
point.
3. Remove minced beef from pan and set
aside. Add 1 tbsp oil to the same pot (no need to clean it
as we will be adding back all the ingredients) and add in
your aromatics, onion, garlic, pimentos and half of the
chadon beni. Sautee the aromatics for a few minutes until
the onions and garlic are softened and the onions are
translucent.
4. Add veggies and cook until just tender (you want to have
a slight bite to your vegetables without an actual crunch).
Add powdered seasonings to taste. When your veggies are
almost finished cooking, add your minced beef back to the
pot and allow the flavours to come together. At this point
you check for seasonings and add the last bit of your chadon
beni. (the freshness gives the dish an elevated taste without
all the fuss)
5. Once you are happy with your flavour, add your pasta and
stir fry, checking for final seasonings. Delicious straight out
of the pot and even better the next day.
Please note that the ingredients used can be changed or
swapped for whatever you have available already and more can
be used. This recipe helps create a delicious meal with minimal
cost, but feel free to add other ingredients if they are available.
My family loves corn or green peas in this and I love to use fresh
thyme as well. The main thing is to use what you love and what
you have available to create a delicious meal that everyone can
enjoy.
