Kerina’s Kitchen Ingredients 1 lb channa soaked 1 carrot finely grated 1 onion finely diced 3 pimentos minced 3 leaves chadon beni 4 cloves garlic minced 1 egg or 2 tbsp mayo Salt and pepper to taste Ingredients 1 lb red beans soaked 1 lb black eyed peas soaked 1 onion diced 4 cloves garlic minced 4 pimentos 4 leaves chadon beni 1 can pasta sauce ¼ cup brown sugar Salt and Pepper to taste Chilli flakes Directions 1.Grind the soak channa in a food mill, processor or blender along with the seasonings. Add grated carrots, ½ cup corn starch, 1 egg (or 2 tbsps mayo) and 1 tbsp grind seasoning (optional). Mix to combine and form 6 patties. 2.Shallow fry patties in oil, drain on paper towel. Prepare your buns and build your burger. Can be served with home-made fries. (These patty add a beautiful crunch to your burger and is extremely tasty and filled with protein.) Directions 1.Sautee aromatics in 2 tbsps of oil until softened. Add soaked beans and just cover with water. Boil until the water reduces by half and the beans have just gotten tender (approximately 35 minutes). Add the pasta sauce, brown sugar and half the chadon beni and reduce heat to a simmer, cook for approximately one hour. Season to taste and add remaining chadon beni at the end. 2.Serve with dinner rolls, rice, pasta or our favourite, corn bread or chips! This is a very filling and delicious meal to make on a budget. Hope you enjoy! 3.*** Favourite additives to this dish are bay leaf, chilli powder and Cajun seasoning. You can also use chicken, veggie or beef stock instead of water for added flavour.
