You will need:
1 x small onion diced
200-300g of really soft tofu
crumbled or mashed
1/3 cup coconut milk (or non dairy
milk of your choice)
Pinch of veggie stock powder or
nutritional yeast
Pinch of turmeric (optional - to give
a yellow egg color)
Splash of sweet chili sauce
1 tablespoon of oil
Method:
1. Sauté your onions in the oil
till they are transparent.
2. Add your crumbled tofu and
gently fry for around a
minute.
3. Combine your milk, veggie
stock, turmeric and sweet
chili sauce and slowly add to
your pan
4. Simmer your mixture till it
starts to thicken and look like
scrambled eggs.
5. Serve on toast or in wraps
