Turmeric Powder:
Ground turmeric is a key ingredient
in many Asian and Indian dishes, it
has a mustard-like, earthy aroma and
a pungent slightly bitter taste. It is
often used in vegan mock egg dishes
to give a yellow egg like colour.
Vital Wheat Gluten:
Also known as wheat gluten, it is as
the name implies made from wheat
gluten. It is made by hydrating wheat
flour to activate the gluten, then
processed to remove everything but
the gluten, then it is dried and re-
ground into flour. It can be added to
breads to help them rise better but it
is primarily used to make mock meat
(Seitan).
Tahina:
Also know as Tahini and Ardeh.
It’s a condiment made from toasted
and ground sesame seeds
Its comes in hulled and unhulled
varieties. Sometimes used in vegan
cheese, it can also be a good egg
replacer in baking.
Kala Namack:
Also known as Himalayan black salt,
(although it’s pink in appearance), it
is a type of rock salt popular in India.
Its very pungent and will add an eggy
flavor and smell to dishes.
