Vegan Kitchen Essentials
T his is by no means a comprehensive list of everything that you could use, but more an
introduction to some of the more “strange” ingredients that you will come across when you
begin cooking vegan.
Apple Cider Vinegar:
Is made by crushing apples and
squeezing out the liquid. Bacteria
and yeast are added to the liquid
to start the alcoholic fermentation
process, where the sugars are
turned into alcohol, then the
alcohol is converted to vinegar by
acetic-acid forming bacteria. The
acetic acid is what gives vinegar its
sour taste.
Nutritional Yeast:
Is a deactivated yeast, It is sold in
the form of flakes or powder. It is a
good source of B vitamins, It has a
strong flavor that is described as
nutty, cheesy or creamy. Its flavor
makes it popular as an ingredient
in vegan cheeses.
Chic Pea Flour:
Also know as Gram flour or Besan.
It is a pulse flour made from
ground chickpeas.
It’s a great egg replacer in vegan
cooking. It contains a high
proportion of carbohydrates, has
more fiber and protein compared
