You will need:
2/3 cup Icing Sugar
2 cups All Purpose Flour
2/3 cup Coconut Oil
½ cup Golden Syrup
¼ cup brown sugar or palm sugar
½ cup coconut oil
1 T Tapioca starch
1 T Potato starch
2 cups of pecans
Method:
1. Preheat oven to 180 Celsius.
2. Place icing sugar, flour and first lot
of coconut oil in a food processor
and process till dough forms.
3. Put in 20x20cm pan and cook for 20
mins or till golden.
4. Melt remaining coconut oil and
golden syrup in small saucepan, add
sugar, stir till sugar dissolves, bring
to a simmer, then remove from heat
and let cool for 10 mins.
5. Whisk in Tapioca and potato starch,
add pecans and stir, pour this
mixture over the base.
6. Bake for a further 25 mins or till
topping is bubbly and set.
7. Allow to cool completely before
cutting.
