You will need:
90 grams of dark cooking chocolate
(check ingredients to ensure vegan)
½ cup coconut oil
2 tsp instant coffee (optional)
1 T Tapioca starch/flour
1 T Potato starch
¼ tsp baking POWDER
½ cup water
2 tsp vegetable oil
¾ cup white sugar
1 tsp vanilla
1 cup All purpose flour
1 cup of pecans
Icing sugar for dusting
Method:
1. Preheat oven to 180 Celsius.
2. Melt chocolate and coconut oil,
let cool slightly then mix in
instant coffee.
3. Whisk the Tapioca flour, potato
starch, baking powder, oil and
water till slightly foamy.
4. Add vanilla and sugar, mix well.
5. Fold in chocolate mixture, stir in
flour and pecans.
6. Pour into a 30x20cm tin.
7. Bake for 25 mins or till just firm
to the touch.
8. Cool in tin – cut up and dust
with icing sugar.
