You will need:
125g Tea biscuits (check ingredents
to ensure vegan)
¼ cup melted coconut oil
700g super firm tofu
1/3 cup of maple syrup (or liquid
sweetener of your choice)
¼ cup lemon or lime juice
1 tsp vanilla essence
¼ cup coconut milk (or non dairy
milk of your choice)
Quantity of Honeycomb
200g dark cooking chocolate (check
ingredients to ensure vegan)
1 T vegetable oil

Preheat oven to 180 Celsius.
Process biscuits in food processor till fine
crumbs – add coconut oil and process till
fully combined.
Press over the base of a 20cm spring form
pan and refrigerate for 30minutes.
Process tofu, liquid sweetener, lemon
juice, vanilla and coconut milk in food
processor till fully blended and smooth
like a thick cream.
Spread half the “cheese” mixture over the
base
Break up your honeycomb and place a
layer on top of cheese layer.
Spread remaining cheese mixture over
honeycomb layer.
