You will need: 2 cups all purpose flour 1 cup brown sugar (or palm sugar) ¼ cup coca powder ½ cup desiccated coconut ¾ cup melted coconut oil 4 cups icing sugar 1 cup cornflour 1 tsp peppermint essence 6 T coconut oil 6 T coconut milk 200g dark cooking chocolate (check ingredients to ensure vegan) Method: 1. 2. Preheat oven to 180 Celsius. Stir or mix in food processor the coconut oil, sugar, desiccated coconut, cocoa and flour till fully combined. 3. Spread into a 30x20cm tin. 4. Bake for 20 mins or till golden. 5. In small saucepan melt coconut oil then add milk, stir till combined. 6. Add sifted icing sugar and cornflower beat well till smooth. 7. Add the peppermint essence and continue to whip till fully combined, Spread over base. 8. Chill till mint layer is set (around 30mins) 9. Cut up chocolate and place in small saucepan with oil and coconut milk, stir over very low heat till chocolate is all melted. 10. Spread over mint layer, cool. 11. TIP: Score chocolate layer with knife before chocolate fully sets, refrigerate overnight, then use hot knife to cut into slices. Adapted from a non vegan old Australian recipe
