You will need:
1 cup coconut oil (melted)
1 cup brown sugar (or palm sugar)
2 ½ cups all purpose flour
1 tsp baking POWDER
4 T custard powder (check
ingredients to ensure vegan)
½ tsp salt
250g of unsalted peanuts
1 ½ cups coconut condensed milk
30g coconut milk powder
1 T Golden Syrup
½ cup coconut oil (melted)
Method:
1. Preheat oven to 180 Celsius.
2. Stir or mix in food processor the
coconut oil, sugar, flour, baking
powder, custard powder and salt
till fully combined.
3. Spread into a 30x20cm tin.
4. Bake for 15 mins or till golden
brown.
5. Spread with topping and bake for
a further 25 mins.
6. Topping: Add condensed coconut
milk, coconut milk powder,
golden syrup and coconut oil to
small saucepan.
7. Stir over a low heat till smooth
and glossy. Add peanuts, stir and
pour over base.
