You will need: 2 cups of all purpose/cake flour 6 tsp baking POWDER ½ tsp salt 1 tsp cinnamon ½ tsp nutmeg 1 ¼ cup brown sugar ¼ cup vegetable oil 4 big ripe bananas 3 T apple cider vinegar ½ cup water 1 tsp of vanilla ¼ cup chopped walnuts (optional) Method: 1. Preheat oven to 180 Celsius. 2. Grease and line with baking paper an 8 inch pan. 3. Mix all ingredients together very well. 4. Bake for 45 minutes or till skewer inserted in middle of cake comes out clean. 5. Ice with icing of your choice. Adapted from a non vegan recipe in Cookery the Australian Way Cookbook
