You will need:
400g Extra firm tofu (or mock meat
of your choice)
1 medium onion thinly sliced
4 cloves of garlic minced
225g of mushrooms sliced
¼ cup fresh basil
¼ cup apple cider vinegar
¾ cup coconut milk (or non dairy
milk of your choice)
2 T of tomato paste
Method:
1. Fry tofu in small amount of
vegetable oil till golden – set
aside.
2. Fry onions till clear, add
minced garlic.
3. Add mushrooms and basil,
cook till mushrooms are
slightly brown.
4. Add vinegar, tomato paste and
coconut milk and simmer for 5
minutes till sauce thickens.
5. Add tofu and stir through till
coated with sauce and
warmed through.
6. Serve over pasta of your
choice.
