You will need: Filling: 2 T of Oil 1 onion diced 2 cloves of garlic minced 150g mushrooms sliced/chopped 300g tomatoes diced ΒΌ cup quick oats or breadcrumbs* 1 tsp thyme 1 tsp rosemary 1 tsp oregano Setian: 2 cloves of garlic minced 425g tin of baked beans 1T soy sauce 1 cup vital wheat gluten 1T nutritional yeast 1 tsp smoked paprika 1 tsp thyme 1 tsp oregano Method: 1. 2. 3. 4. 5. 6. 7. 8. 9. Heat oil in large saucepan, fry onion till translucent. Add garlic, mushrooms and tomatoes, cook for another 5 mins, till tomatoes are reduced. Reduce heat, add herbs and quick oats/breadcrumbs. Cook till slightly dry – set aside to cool. In a food processor, process garlic and baked beans till smooth. Add vital wheat gluten, nutritional yeast, herbs and soy sauce. Process till a dough forms. Then process a further 1 minute, this will help activate the gluten. Use a large piece of heavy duty foil, give it a spray with oil and then lay out your setian in a rectangle. Spread the filling along the middle of the setian and fold your setian over to encase the filling. Roll up your foil and secure the ends tightly. Steam in stove top steamer for 40 mins, let cool slightly and serve. *Many breadcrumbs contain palm oil, which some people consider to not be vegan – please check ingredients of store bought breadcrumbs.
