You will need:
200g of mock chicken, or 60g
TVP cutlets or 200-300g of
extra firm tofu – sliced
2 T of Oil
1 leek thinly sliced
400g sliced mushrooms
¼ cup apple cider vinegar
½ cup vegetable stock
¼ cup coconut cream
Method:
1. Sauté your chicken,
rehydrated TVP or tofu in oil
till cooked.
2. Add leek and cook for around
3 mins.
3. Add mushrooms and cook for
a further 3-4 mins, till
mushrooms are soft.
4. Add apple cider vinegar to
pan, bring to boil and simmer
for a few mins, till vinegar is
reduced slightly.
5. Stir in stock and coconut
cream, season with pepper.
Simmer for a further 3-4 mins.
6. Serve on pasta of your choice.
