You will need:
6 small vegan Italian sausages thinly
sliced
2 T of Oil
2 cloves of garlic minced
I carrot chopped
I onion chopped
2 sticks of celery chopped
2 T of tomato paste
2 tsp of vegetable stock powder
2 T of red wine vinegar or apple
cider vinegar
1 tin of chopped tomatoes
Method:
1. Fry vegan sausages for 3-4
mins till browned.
2. Add garlic, carrot, onion,
celery and cook for a further
3-4 mins.
3. Add remaining ingredients,
bring to boil, then reduce to
a simmer for 30 mins, till
sauce is thick and reduced
slightly.
4. Serve over pasta of your
choice with vegan parmesan.
