You will need :

A quantity of roasted pumpkin 2 T of Oil 3 cloves of garlic minced 1 onion chopped
250g Arborio rice or jobs tears or other grain of your choice
1 litre of vegetable stock Salt and pepper to taste Vegan parmesan to serve

Method : 1 . Heat oil in pan , add garlic and onion , sauté till clear .

2 . Add rice and make sure it can all be coated by the oil , add more oil if you need .

3 . Add one cup of stock , stir over low heat till all stock gets absorbed .

4 . Then repeat till you use all of your stock , or your rice / grain is soft an no longer chewy . Use more stock if necessary .

5 . Add your roasted pumpkin and serve with grated vegan parmesan .
