You will need:
A quantity of roasted pumpkin 2 T of Oil 3 cloves of garlic minced 1 onion chopped
250g Arborio rice or jobs tears or other grain of your choice
1 litre of vegetable stock Salt and pepper to taste Vegan parmesan to serve
Method: 1. Heat oil in pan, add garlic and onion, sauté till clear.
2. Add rice and make sure it can all be coated by the oil, add more oil if you need.
3. Add one cup of stock, stir over low heat till all stock gets absorbed.
4. Then repeat till you use all of your stock, or your rice / grain is soft an no longer chewy. Use more stock if necessary.
5. Add your roasted pumpkin and serve with grated vegan parmesan.
