You will need: 1 Onion sliced 1 x small package of mushrooms 150-200 grams 1 tsp of vegetable stock powder 150g of pre cooked spinach 1 T of coconut oil 2 T of plain flour (or thickening agent of your choice) 1 cup of non dairy milk – I usually use coconut 1 x quantity of Strudel dough Method: 1. Fry onion in oil till soft. 2. Add mushrooms and cook for 2-3 minutes. 3. Add flour and stock powder. 4. Slowly add milk and stir till thickened. 5. Add spinach and mix well. 6. Roll out dough to desired shape and lay out filling – roll up. 7. Cook in 180 Celsius oven until pastry is golden brown (approx. 20 minutes) Adapted from a non vegan recipe in a Nestle Evaporated milk pamphlet
