You will need: 2 x Onions sliced 2 cloves of garlic crushed 300g of cooked spinach ½ tsp ground cinnamon ½ tsp ground cloves 200g of Vegan Feta or soft tofu 2 T chic pea flour Oil Salt/pepper Method: 1. Fry onion and garlic in oil till soft. 2. Add mushrooms and cook for 2-3 minutes. 3. Add feta/tofu, seasonings and chic pea flour. 4. Mix till fully combined. 5. Roll out dough as thinly as possible divide mixture into 8 portions and place on dough, roll up into desired shape. 6. Cook in 180 Celsius oven until pastry is golden brown (approx. 20 minutes) Adapted from a non vegan dish that I used to buy from a small shop on Smith Street in Melbourne, Australia.
