PRE-OPERATIONAL SANITATION
1. Equipment Preparation.
All equipment used will be cleaned, sanitized & primed per manufacturer’s directions prior to starting
process.
Established Cleaning Procedures include;
Equipment is disassembled, as necessary. Lockout Procedures MUST be implemented.
Debris is removed from equipment (interior & exterior as required).
Equipment is rinsed & reassembled.
The approved cleaning and sanitizing solutions are mixed per instructions.
Compressors turned on.
Agitators are then turned on.
2. Facility Cleaning.
Cleaning Procedures
Debris is swept up and discarded.
Facilities are rinsed with potable water.
Facilities are cleaned with an approved cleaner.
Clear and clean work areas frequently.
Cleaning Frequency.
A cleaning schedule should be in place for end of shift/day (floor swept, equipment cleaned
& sanitized as necessary, etc.).
Deep cleaning schedule weekly (cleaning light fixtures, storage areas, etc.).
Implementation, Monitoring, and Record Keeping.
Corrective Actions.
When the manager determines that equipment or parts are not properly cleaned, the cleaning
procedure and inspection are repeated. The manager monitors the cleaning process and retrains the
employees doing the cleaning, if necessary. Pre-operational Sanitation is recorded daily in the
Sanitation Log and verified by the manager.
