The hand caught tuna is an impressive piece of
fish. Rubbed with Waitrose Toasted Sesame oil and
quickly seared on both sides on top of a Waitrose
Super Bright stir fry; that’s hard to beat.
If you have the time, why not cure your own
salmon. Recipes are easy to find online, and you
just need dill, juniper berries, salt and sugar and
if you’re looking for the visual wow factor, add
beetroot. My Scandinavian heritage means I have
salmon swimming through my veins - partly due to
the amount I eat!
You don’t have to descale or gut a whole fish, our
counter staff will be delighted to do that for you.
If you want to impress guests, Fresh Whole Sea
Bass is simple to cook, stuffed with asian herbs and
aromatics, such as ginger, chilli, coriander, and slices
of lime.
Maine Lobster tails are a real treat for me. They are
previously frozen, but so simple to cook and usually
I make lobster tacos with salsa with a lime sour
cream. So much easier to keep it simple.
Recently I ate at a fantastic Mexican restaurant
abroad and I have been craving ceviche (seafood
or fish cured in citrus juice) ever since. I diced raw
prawns and cured them in a liquid of lime and
orange juice, jalapenos, coriander, red onion, and
seasoned with sea salt. Leave the mixture (make
sure the prawns are covered in the juice) for a few
hours or ideally overnight. Eat with avocado and
tostadas. Again, find a recipe online to your liking.
Mid-summer is coming and what better way to
celebrate than to eat the fruits of the sea and
maybe, a few shots of aquavit.
