SCRAMBLED EGG MUFFINS

| Makes 4 muffins
3 eggs (or I use 1 whole egg and 3 egg whites)
handful chopped spinach
cherry tomatoes halved
fresh basil for sprinkling
salt and pepper to taste
cheese for sprinkling (optional)

I am a flexible dieter, lover of all whole foods,
a smoothie advocate and brunch enthusiast. I pride
myself in counting colors instead of calories and
eating and drinking the rainbow on a daily basis. Remember to keep it colorful, nutritious and delicious.
Color your plate!
1 Preheat oven to 350°F/175°C.
2 Whisk together eggs, salt, pepper and then add in
spinach and tomatoes.
3 Pour in greased muffin pans.
4 Sprinkle with basil and cheese if using.
5 Bake for around 15-20 minutes until center is set.
6 Enjoy as a main or side dish.
