Hindbeh- Chicory Salad( 6 servings)
Ingredients
• 1 Kg fresh chicory, washed thoroughly, dried and chopped into small pieces
• 1 / 4 cup olive oil
• 3 medium onions, thinly sliced
• 1 / 3 cup lemon juice
• 1 lemon, quartered
• 2 minced garlic cloves
• 10 peeled whole garlic cloves
• 3 cups water for boiling
• Salt to taste
Preparation
• Bring water to a boil, blanch chicory in boiling water for 5 minutes or until tender; squeeze water out of the blanched chicory.
