CHEESE OF THE MONTH Beaufort d ’ Alpage
Beaufort is a French Alpine cheese , which means it should be famous , but is often overshadowed by its better-known cousins Gruyère and Comté . Named after the town of Beaufort , in the province of Savoie in the Rhône-Alpes Region of France , this cheese is one of the finest Alpine cheeses in the world and is distinguished by its concave sides and size . Beaufort d ’ Alpage is the smallest production of all Beaufort and is made in small quantities , each by a single cheesemaker , exclusively from early June to end of September using milk from a single herd that has been feeding on the lush alpine pastures over 1,500m high . Each wheel , which traditionally weighs 45kg requires about 130 gallons ( or around 490 Litres ) of milk to make , and the final form is about 30 inches ( 76cm ) in diameter , and 6 to 7 inches ( 15-17cm ) tall . Traditional methods of production are still used and , once the cheese has reached a certain level of maturity , it is smeared with a mixture called morge ( a mixture of brine , old cheese scrapings , and whey ), which produces its flavour and pale-yellow rind . It is then matured further in a cool mountain cellar until it reaches its full rich and complex potential . Beaufort d ’ Alpage has a dense , pliable texture with bold flavours that range from toasted cream and hazelnuts to cooked onions and hay . The close , concentrated creamy texture and nutty , slightly sweet lingering flavours are typical of this rare cheese which also has excellent melting qualities .

NAVEL ORANGES Australian-grown Navels are in season from May to November . Characterised by their rich orange colour , Navels have a tangy sweet flavour . Use Navel oranges in warming winter puddings and cakes , and juice the fresh fruit for breakfast .
SEVILLE ORANGES These large , vibrant rough-skinned oranges are only suitable for cooking . The bitter flesh , skin and seeds make the perfect tangy marmalade . Seville oranges are only available in late winter .
BLOOD ORANGES Arriving in July and only available until September , these deep ruby-fleshed oranges have a delicious tangy raspberry-citrus flavour . Deeper ruby-red tinged skin generally indicates more intense-coloured flesh . The colour depends on variety , exposure to sunlight and growing conditions .
CARA CARA NAVEL ORANGES Grown in Australia , these delicious oranges have deep rosy-orange juicy flesh . They ’ re seedless with vivid orange thin skin and resemble the common Washington navel orange . This naturally sweet orange variety is low in acidity and has a refreshingly tart taste , similar to cranberry . They ’ re in season from mid-June to July .
Juicy , tangy oranges make a refreshing snack but they are also fabulous in sweet and savoury salads , delicious baked goods and desserts like Oranges with Whiskey Toffee .
