KUMARA & CARAMELISED ONION TORTILLA

1 / 3 cup olive oil 900g kumara ( orange sweet potato ), peeled and cut into 2-3 cm pieces 1 brown onion , thinly sliced 2 tsp caster sugar 6 free-range eggs

STEP 1 : Preheat oven to 180 * C / 160 * C fan forced . Line a 160cm x 26 cm slice pan with baking paper . Heat 2tbs oil in a large deep frying pan over medium-high heat . Add kumara and cook , tossing often for 10-15 minutes until golden brown and almost cooked . Spoon kumara into the slice pan . Set aside . STEP 2 : Add onions and sugar to the frying pan and cook , stirring often , over medium-high heat for 10 minutes until golden . Toss onions and kumara . Set aside to cool . STEP 3 : Whisk eggs in a bowl and season to taste . Pour eggs over kumara mixture . Bake for 25-30 minutes until set . Stand for 15 minutes . Slice and serve warm with a mixed salad or chill until ready to serve .

MOROCCAN ROASTED BUTTERNUT PUMPKIN WITH FETA

2 x 750g pieces halved butternut pumpkin ( skin on ), deseeded 1 large red onion , peeled , halved and thickly sliced ¼ cup extra virgin olive oil 2 garlic cloves , finely chopped 1 tsp Moroccan seasoning 1 tbs honey 75g feta cheese , crumbled 1 / 3 cup pistachios , chopped 1 small pomegranate , seeds removed Rocket leaves , to serve Tahini yoghurt dressing : 1 tbs tahini 1 / 3 cup Greek-style natural yoghurt 2 tbs lemon juice 1 tsp pomegranate molasses

Step 1 Preheat oven to 200 ° C fan-forced . Cut a thin slice off the base of the halved pumpkin ( so it can stand upright ) and cut into 2cm thick slices . Place pumpkin slices upright and close together on a

Step 3 Meanwhile , to make the dressing , place tahini , yoghurt and lemon juice in a bowl . Season with salt and pepper . Mix to combine . Swirl through the pomegranate molasses .

Step 4 Sprinkle pumpkin mixture with feta , pistachios and pomegranate seeds . Serve with tahini dressing and rocket leaves .
