So much more complex and scrumptious than mac n cheese! Layers of white hominy, crème, several varieties of cheese, green chiles, jalapeños and, of course, bacon!

How did you discover this dish?

I went to college in West Texas and had the pleasure of having many events either hosted at or catered by Perini Ranch. I remember seeing herds of cattle in the fields and walking beside the outbuildings as the sun set and breathing in the smell of mesquite barbeque that accompanied this decadent dish. Those moments are blazoned in my memory.

I attended many more college reunions and design advisory board meetings in Abilene, Texas just so I could go to Perini Ranch! In the meantime, I’ve ordered their meat online and have managed to perfect the hominy dish at home!
