Braise the spices till the aroma arises, thereafter
add in the tomato mixture and braise till almost
dry and the oil comes to the top. When very little
water is left make three holes to crack your eggs
in. Lower the heat and crack eggs into the tomato
mixture. Sprinkle some water over and cover to
cook.
Cook to a desired yolk texture. Lastly cut fresh
green Chillies over and fresh parsley or
coriander.
Serve with hot Roti or pita or health bread.
Variations: Add baked beans, spinach or fenugreek
(methi bagie) into the tomato mixture.
Serve it with a mezze platter to complete the
middle eastern theme.
