With just one three-hour class , you ’ ll be making truffles for all those special occasions--from graduations to weddings to gifts , and more ! We will make five different recipes in class , and each student will take home a nice box of truffles . Plus , we ’ ll sample some other chocolate-dipped treats in class . Optional truffle / candy kit will be available for purchase for future candy making projects . Price of the kit is $ 20 . We are sorry , but we cannot accommodate nut allergies in this class .

Traditional Southern Cooking – A Dinner
Southern cooking has had a heavy influence from all corners of the world ! Join us in creating a memorable southern-style meal that includes crab dip , traditional cheese straws , gumbo , jambalaya , red beans and rice , buttermilk biscuits , cheese grits , pecan praline candy and traditional bread pudding with bourbon sauce . We may even add a few more recipes ! Supply fee of $ 17 cash due to the instructor at class .

Scones
Scones are wedges of slightly sweet baked biscuits , waiting to be slathered with a topping . Originating in Scotland , these tasty morsels are perfectly paired with a cup of fancy coffee or tea . Together we ’ ll make several varieties including lemon poppyseed , orange cranberry , and raspberry white chocolate scones . We ’ ll use healthy ingredients including wheat germ and oats to boost nutrition . Supply fee of $ 16 cash due to instructor at class .

Tantalizing Thai Cuisine ( Participation )
You ’ ll begin by preparing Vietnamese summer rolls served with both hoisin and peanut sauce for dipping . Vietnamese spring rolls are made with pork , chicken , and glass noodles stuffed in rice paper , fried crispy , and served with the classic nuoc cham for dipping . You ’ ll then prepare Pad Thai blending the vibrant flavors of Thailand with rice noodles using chicken , eggs , chilies , garlic , basil , scallions , bean sprouts , sesame oil , lemon and crushed red pepper flakes . For dessert , refreshing Thai lime custard topped with fresh whipped cream . This is a participation class .

Tex-Mex Fiesta ( Participation )
We ’ ll begin with beef empanadas , tomatoes , potatoes and herbs . Flautas are next with chicken in a jalapeno / garlic paste and fried crisp in corn tortillas . We ’ ll then prepare Mexican rice with onions , garlic , tomatoes and fresh cilantro along with Mexican-style corn prepared with lime aioli , cayenne pepper and cotija cheese . Fajitas follow with tender strips of marinated beef and chicken with sauteed bell peppers and onions wrapped in a warm tortilla shell . We ’ ll finish with a Yucatecan-style delight , fresh coconut blended with rich custard in a wonderful nutty crust , baked to a caramelly brown , and served with crème fraiche .

The Art of Sushi ( Participation )
Come explore the world of sushi as you create this Japanese delicacy yourself . Begin by preparing the coveted sushi rice and learning the art of “ nigiri-sushi ”( hand molded rice ) topped with shrimp , unagi , and ahi tuna . We ’ ll also prepare “ maki-sushi ” using a bamboo mat to roll rice with various fillings in and around Nori ( seaweed sheets ). Options and accompaniments will include surimi , cucumber , avocado , cream cheese , teriyaki chicken , tempura onions , spicy mayo , eel sauce , wasabi , pickled ginger and soy sauce . This class includes both demonstration and hands-on instruction .

Traditional Italian Cuisine ( Participation )
Enjoy traditional Italian favorites beginning with classic panzanella , a toasted bread salad with refreshing summer vegetables in a light vinaigrette . You ’ ll prepare the celebrated chicken saltimbocca using thin slice prosciutto ham and fresh sage topped with a lemon caper butter sauce and pan fried artichokes . You ’ ll learn the art of potato gnocchi , shaped potato dumpling , tossed with a medley of amazing sauces including fresh basil pesto , marinara , and brown butter with sage . We ’ ll finish with cannoli , fried pastry filled with sweetened ricotta and mascarpone cheeses , served on a pool of warm chocolate sauce and garnished with chopped pistachios .
