NEW | All About Meat
The meat available today in the Twin Cities is more
varied and exciting than ever before! Join cooking
teacher Jan for an exploration of this new world of
meat. Learn how meat animals are graded, aged and
packaged, and which cuts of beef, lamb and pork
are best grilled, dry-roasted, pan-fried, braised and
pressure-cooked. Leave with tips on how to find the
best meat, work with a butcher, cook meat at home and
extensive handouts of independent butcher shops and
recipes. Bring a cast-iron skillet to class if you have one;
not required. This is both a demonstration and handson class. Supply fee of $12 cash paid to instructor at
class. Class fee: $39.

The Twin Cities are home to exceptional butcher shops
carrying fine, dry-aged beef, shop-made sausages,
old-fashioned stewing hens and other delightful
meats to enliven your cooking. Join cooking teacher
Jan for a four-hour tour of a four local shops—
encounter cuts uncommon in American supermarkets
but commonplace in other parts of the world and
overlooked but especially tasty and inexpensive
cuts. Items will be available for purchase. Locations
(Minneapolis/St. Paul) and itinerary emailed one week
prior. Bring an insulated bag or cooler. Extensive
handouts with recipes provided. Class fee: $35.
Apples, berries, peaches, oranges and more make beautiful and
delicious jams and jellies. Learn the difference between the various
preserves and have the opportunity to taste each. Discover the
secrets of pectin to make perfect preserves and ideas to make your
preserves one of a kind. Acquire new “hot water bath” techniques
that are applicable to other canning projects. Prepare a batch of
jam from start to finish and take one or two jars home to enjoy.
This is a hands-on class. Supply fee of $8 paid to instructor at class.

Mediterranean Party Cuisine
Captivate your taste buds with the tantalizing flavors of the
Mediterranean. Create fresh Kalamata olive tapenade, rich
hummus and baba ghanoush with garlic pita chips, crispy Greek
spanakopita, tender lamb shish-kabobs with yogurt-cucumber
sauce plus, flavorful chicken and pistachio rolls with fresh pesto
and lemon. Come with an appetite. This is a hands-on class. Bring
a container. Supply fee of $14 cash per person paid to instructor
at class. Class fee: $29 one; $55 two.

wonders with Chef Anu. Discover the flavors of Morocco with
Harissa, a spice paste that goes with anything, served with
crackers; Chicken Tangine, a chicken casserole dish with perfumed
lemons, spices and olives and Moroccan Mufletas, a handmade
bread served with melted butter and Moroccan honey. End class
with baklava purses, a Moroccan bakery shop staple and mint
tea. Instructor provides all the supplies for this hands-on class.
