PREP TIME 10 MINUTES Ingredients Serves 6 people 1/4 cup sake 3 Tbsp. lemon juice 2 Tbsp. brown sugar, packed 1 Tbsp. cooking oil 1 Tbsp. finely grated ginger root 1 Tbsp. soy sauce 2 garlic cloves, minced 2 tsp. grated lemon zest 1/2 tsp. chili paste (sambal oelek) 6 halibut fillets (about 1 inch, thick 4 oz. each) 1 Tbsp. f inely chopped green onion Lemon Ginger halibut 1. Lemon Ginger Marinade Combine the first 9 ingredients in a large resealable freezer bag. 2. Add fillets and chill for 30 minutes. Drain marinade into a saucepan. Simmer on medium-low until slightly thickened. 3. Grill fillets on direct medium heat for about 4 minutes per side, brushing with thickened marinade, until fish flakes easily when tested with a fork. 4. Sprinkle with green onion. Moist, flakey fish infused with the flavours of sake, lemon and ginger. Delicious!
